White Chicken Chili

2 TBLSP Extra virgin olive oil
1 medium onion chopped
3 cloves garlic minced
4oz. chopped jalapeno peppers
4oz. chopped green chilies
2 tsp dried oregano
2 tsp ground cumin
1/8 tsp cayenne pepper
28 oz. chicken stock
1 28oz. Brinkman's chunk canned chicken
8 oz. Frozen corn
2 cans cannellini beans (rinse and drained)
1 can Black bean (rinse and drained)

In a large stock pot slowly cook onion in oil till tender and translucent.

Add garlic, jalapeño peppers, green chilies, oregano, cumin and cayenne pepper.

Continue to cook for another 3 minutes.

To that add 1 can Brinkman's chicken, chicken stock and beans

Cook 15-20 minutes stirring occasionally.

Salt to taste.

We enjoy the white chili with a little cheese on top and hard Home Style pretzels
