Fresh Perch or Walleye Fillets
3 Farm Fresh eggs
Ritz crackers
Vegetable Oil


In a medium bowl take 3 Farm Fresh eggs and beat slightly

In a Ziploc bag, take 2 sleeves of Ritz crackers and coarsely
(not really fine, you want some texture to these) pound them
with rolling pin, place them on a flat cookie sheet lined with
wax paper

Dip the fish fillets in the egg mixture and then the cracker mixture making sure that you press down firmly to coat the fish completely

In a frying pan, heat 1/3 cup oil over medium to medium low

Place the filets in the frying pan and cook for about 2 minutes per side or until they are lightly browned and the crumbs stick to the fish

Then place the cooked filets onto a cookie sheet and bake 350 for about 10-15 minutes

**What I do is prepare the fish and place on cookie sheet in the morning, put in fridge and then cook in oven at dinner time, simply quick and easy ! And with the Ritz cracker crumbs, it makes the fish have a nice warm buttery taste to them.
